Stewed pears in wine with hibiscus and aronia

serves 2


  • 1 kg of any pears
  • 0.5 kg of dark grapes
  • 350 ml red wine (sweet)
  • 500 ml of water
  • 3 tablespoons of honey
  • 2 anise stars
  • 3gars
  • a pinch of nutmeg
  • 200 g of frozen chokeberry
  • a few flowers of dried hibiscus
  • 1 teaspoon The Young Formula
  • 1 teaspoon of potato starch
  • cottage cheese or natural / soy yoghurt

How to do it?

Peel the pears and leave them whole. Stew the chokeberry in a pot until it releases juice. Add wine, water and spices, hibiscus flowers. Put pears into the juice prepared in this way. Cook everything for about 20 minutes. After this time, put the pears into an ovenproof dish, add the grapes and pour the juice over the whole thing. Bake at 180 C for 45 minutes.

In the meantime, prepare the sauce. Add honey, potato starch and The Young formula to the rest of the juice, stirring vigorously until thickened.

Put the baked pears on a platter, pour over the sauce and serve with cottage cheese or any natural yoghurt.
